[Phytic acid and phytase content in milling products of cereals or pseudo-cereals]

German. Aus Weizen-, Dinkel- und Roggenmehlfraktionen (Auszugsmehl, Vollkornmehl, Kleie, Kleiemehl) wurde Phytinsaeure extrahiert und die Phosphatgruppen photometrisch bestimmt. Die Phytinsaeuregehalte von Vollkornmehlen des Weizens, Dinkels und Roggens liegen im Intervall 2,2 bis 3,4 g P/kg TS. Eine Phosphorbilanz (Beziehung Gesamtphosphor zu Phytatphosphor und loeslichem Phosphor) gibt Aufschluss ueber den Vermahlungseinfluss. Bei der Phytasebestimmung lassen sich hohe Aktivitaeten in Kleien nachweisen, wobei die mit Abstand hoechste Aktivitaet in Roggenkleie festgestellt wurde. Die Phytaseaktivitaeten in Quinoa sind vergleichsweise gering. [S-93-00647]
