English. The Cemagref has been working for many years on the questions of traceability in the meat industry. The developed competences are exposed through examples of applications. They are characterised by a good knowledge of the industrial conditions and by the capacity to develop innovating solutions of identification. The purpose of all undertaken work is to guarantee the quality of the products and to allow a better food risk management.

Elles se caractérisent par une bonne connaissance des filières professionnelles et par la capacité à développer des solutions innovantes d'identification. Tous les travaux menés ont pour but de garantir la qualité des produits et de pouvoir avoir une meilleure gestion des risques alimentaires.
