English. In this paper, we use the fuzzy symbolic approach to handle the operator knowledge of cheese ripening in a decision support system. From low level sensory information is built a high level information corresponding to the ripening state of cheese. The decision support system was validated on five different ripening kinetics, a rate of 95 % of compatibility is obtained between the model and the expert on a data base of 85 points. A first study was led on the uncertainty brought by the experts and its propagation in the fuzzy symbolic approach.
Show more [+] Less [-]French. Dans ce papier, nous utilisons l'approche symbolique floue pour manipuler la connaissance des opérateurs sur l'affinage de fromages dans un système d'aide à la décision. A partir d'informations bas niveau est construite une information de haut niveau correspondant à l'état d'affinage du fromage. Le système d'aide à la décision a été validé sur 5 différentes cinétiques d'affinage , un taux de 95 % de compatibilité a été obtenu entre le modèle et l'expert sur une base de données de 85 points. Une première étude a été mené sur l'incertitude apportée par les experts et sa propagation dans l'approche symbolique floue.
