[Utilization of banana fruit into banana flour]

English. Agricultural products, in general were perishable, easily destroyed before being consumed. It was estimated that 35-45 percent of those products were lost by destroying, the rest were sold as fresh material. Banana was a source of vitamin A, ascorbic acid, thiamine, and Riboflavine. Banana also produce 104 cal/100 g of pulp and the fruit was easily digested than the other fruits. The damage of banana especially at abundant time could overcome by processing the banana into banana flour (meal). The processing was simple, the taste was delicious, and could increase farmer income. Banana flour could be consumed for baby, and younger child, as a mixing material in food industry, and as binding agent on pharmaceutical industry

Hasil-hasil pertanian umumnya sangat mudah mengalami kerusakan, sebelum sempat dikonsumsi, jumlah yang hilang karena kerusakan diperkirakan mencapai 35-40 persen, sisanya dijual dalam bentuk bahan segarnya. Pisang merupakan sumber vitamin A, asam Askorbat, Thiamin, Riboflavin. Disamping itu pisang menghasilkan 104 kalori setiap 100 gram daging buah dan termasuk buah yang mudah dicerna dibandingkan dengan buah lain. Salah satu hasil olahan pisang yang paling sederhana dan dapat menambah cita rasa serta pendapatan petani adalah dengan mengolahnya menjadi tepung pisang, agar dapat menghindari kerusakan pada saat produksi berlebihan. Tepung pisang dapat digunakan sebagai bahan makanan untuk anak bayi dan balita, sebagai bahan pencampuran pada industri bahan makanan dan sebagai bahan pengikat pada industri farmasi
