Over 1998 to 2000 in Lithuanian Agricultural University was carried out the laboratory research of the effect of growth inhibitors on the quality of early potatoes during the storage and quality processing products. Very early, early and mid early varieties: "Gloria", "Voke" and "Mirta" were treated with the growth inhibitor "Stop Kielek 01DP" (1 kg/1t if tubers). The potato was stored in the temperature of 9...10 deg C and relative air humidity of 90-95 per cent for conditions 6 and 12 months. The quality of potato and its products and the degree of sprouting were monitored. The research indicates that the use of the growth inhibitor had positive impact on the chemical composition of the potato tuber, especially at the end of the storage period, and improved the quality of potato products. The loss of dry matter, starch and saccharose was less in the potatoes that were treated with the growth inhibitor in comparison with those that were not. The quality of chips and French fries that were produced from the growth inhibitor treated potatoes
