[Phenolic compounds in "Malus domestica". Influence of environmental factors]

English. Phenolic compounds and specially flavonols have been determined, from May to October, in fruits and leaves gathered from the same tree. The flavonol concentration reaches its maximum in May-June both in leaves and fruits. The same for "total" phenolic compounds. In the fruit the flavonol amount is higher in the peel (more than 70%), according to the protective role of flavonoid compounds against environmental factors (UV solar radiations and microorganisms). Also in this case, as shown in other plants, a positive correlation is evident between altitude and concentration of flavonols.
Show more [+] Less [-]French. On a evalue la quantite de phenols totals et de flavonols presents dans des fruits et des feuilles de Malus domestica var. Golden delicious, recoltes de mai a octobre. La concentration maximale est rejointe en mai-juin, soit dans les feuilles, soit dans les fruits. Dans les fruits, la quantite de flavonols est plus grande dans la pelure (plus de 70%), ce qui s'accorde avec l'hypothese du role protectif de ces substances envers certains facteurs du milieu, tels que les radiations UV et les micro-organismes. Dans ce cas aussi, comme il a deja ete demontre pour d'autres plantes, une correlation positive est evidente entre altitude et concentration des flavonols
