[The effect of harvest time on the characteristics of olive oil extracted from the pulp and the fruits of two cultivars ''Doebli and Khodeiri]

The present study was conducted to evaluate the effect of seeds removal from olive fruits and maturity degree on quality and purity criteria of Doebli and Khodeiri'' varieties during the two growth seasons (2008-2009), (2009-2010). The results revealed that removing seeds from fruits had no effect on the free acidity. whereas, it caused reducing in peroxide index and UV absorbance K232, K270, while had no effect on fatty acids of studied varieties. Moreover it caused reducing in the amount of total sterols, Ä7-Stigmastenol, waxes and pigments but increasing in polyphenols amount. No effect was reported on Erthyroide and Uvaol compounds, and the ratios of OOO, SLO-POO, SOO, PLO, LOO. The fruits maturity progress of Deiabli and Khadieri varieties accompanied with: - increasing in free acidity, peroxide index, and UV absorbance K232, K270. - Increasing in linolic, Linolenic acids while decreasing in oleic acid. Increasing waxes but decreasing in pigments and polyphenols.- - Increasing in the following triacylglycerols (LLL, LOO, PLO).
