Abstract: By using the research technique, the Delphi method, the National Restaurant Association began a futuristic study of the foodservice industry in the year 2000. This study will assist the restaurant operator in long-term planning and adapting procedures and menus for the rapidly changing consumer demands of the future. Results from the survey were compiled into nine categories: 1) industry structure, 2) work force, 3) government, 4) technology, 5) facilities and operations, 6) finance, 7) food and menu, 8) marketing, and 9) external issues. The study includes the following predictions for the future: independent operators and entrepreneurs will be the main source of new restaurant concepts, a higher tax level for individuals and businesses will be in effect, and nutritional concerns and food flavors will become critical at all types of foodservice operations.
