Abstract: This publication contains recipes for large quantity food preparation for school lunch programs. The recipes have been received from food service personnel in several states and the USDA. Each recipe generally yields 100 servings and, if the recipe contributes toward the school lunch meal requirements, the category and amount of the contribution is indicated.
