"'Double muscling' has been known to exist in cattle for many years, but little attention has been given this trait until lately because of its rarity. However, recent use of new breeds of cattle in the United States, some of which apparently have been selected for double muscling, together with current emphasis on producing cattle with a higher proportion of lean meat (and less fat) and the popularity of the heavily muscled, shallow-bodied steer in the showring could be causing selection to favor double muscling"-- Page 1.
