Vegetarian meal-planning guide for diabetic persons
1979
Smith, Elizabeth
Abstract: Food lists, charts, and practical guidelines on food groups, portion sizes, and sample meal plans show how to plan vegetarian meals for a diabetic person. The incorporation of milk (lacto) and egg (ovo) is deliberate, to correct vegan diet deficiencies of vitamins B12, A, D, riboflavin, calcium, and iron. The importance of dietary protein is emphasized. Snack and meal planning from all six food groups creates an interesting, nutritious, and balanced diet. Sample meal plans and menus illustrate the vegetarian eating plan for diabetics. Alterations in the suggested plans to suit individual dietary presciptions should be coordinated by the diabetic with assistance from a dietitian.
