Abstract: Prepared under the auspices of the Indian Health Service, this recipe booklet is designed for low calorie/fat/cholesterol cooking. Beverages, breads, main dishes, desserts, salads/vegetables, and salad dressings/sauces constitute categories of recipes, each including calorie and food exchange information. Additionally, low calorie cooking hints, recipe modifications, low sodium diets, sweetener equivalents, seasonings and a glossary of spices/herbs are included.
