Abstract: A review of lipid research during the past decade analyzes the current knowledge of the roles of lipids in human nutrition; information is related to dietary aspects. Although the book is designed primarily for physicians, other health professionals, food scientists and consumers with some training in human physiology will find the information useful to clarify the role of dietary fat. Topics covered are: dietary fats and body lipids (terms and definitions); the technology of edible fats and oils; trans fatty acids; cholesterophobia; saturated and polyunsaturatedfats; lipoproteins; and major-intervention studies.
