Abstract: The Sanitation and Health workshop, developed by the Nutrition Education and Training Program of the Texas Department of Health and Human Services, is designed for food service workers. The purpose of the program is to protect public health by establishing adeqate standards for all food service operations. The program discusses the importance of personal hygiene and ways to reduce the growth of harmful bacteria through proper sanitation techniques, proper food handling, preparation, and storage,and effective warewashing and pest control techniques.
