Analysis of dietary fiber
1977
Schaller, D.
The nutritional or physiological properties of dietary fiber are assessed to determine its dietary importance and the level desirable. Some methods of analysis are described, and food product applications are made. The crude fiber analysis is the most common analysis, but it is misleading. The neutral detergent fiber (NDF) method isolates cell walls containing certain components. The acid detergent fiber (ADF) analysis removes hemicelluloses and the soluble and digestible components. Lignin analyses are also applicable. Tables show examples and statistics.
