Obesity: The American disease
1979
Van Itallie, Theodore B.
Evidence indicates that Americans have become significantly more obese in the last century. Some factors that have probably contributed to obesity in America include: increased use of fuel and other energy sources, which has lead to a more sedentary lifestyle; dietary changes, such as a decreased ratio of complex to simple carbohydrates; decreased dietary fiber intake; increased sugar consumption; increased saturated fat consumption; and increased caloric density. The high prevalence of obesity is a continuing public health problem. There are two theories for the causes of obesity: "set-point" (biologically programmed) and environmental; they are not mutually exclusive. Animal and human studies tend to support both theories.
