Extract: A foodservice training manual was developed and validated for use by foodservice supervisors with limited knowledge and teaching abilities. Results showed significant gain in performance by foodservice workers 4 weeks after training. At 8 weeks, a return to pretraining behavior was observed, suggesting the necessity for regular training.
