Convenience pays off for Long Island hospital

Benefits experienced by Central Suffolk Hospital in Riverhead, N.Y., using a "kitchenless, total convenience central dietary system are described. The system, which has operated for six years, eliminates almost all on-site food preparation and dishware handling, reduces equipment, maintenance and evens work flow. Personnel requirements are reduced; five workers are able to complete a food tray assembly within 18 seconds. The system has operated in the black at a cost of less than 3 dollars per patient meal.
