Rutgers study establishes performance of metallized polyester film for chips

A study revealed that metallized polyester film displayed superior ability to prevent oxidative rancidity and the organoleptic changes associated with it in potato chips, as compared to the three other films tested. Hexanal levels and the moisture content were also lower in metallized polyester packaging. Potato chips were tested at three different temperatures and constant relative humidity over a 33 day period. A taste panel considered the chips packaged in metallized polyester to be most like the control sample.
