Zinc bioavailability of human and cow's milk
1986
Recent studies of the bioavailability of zinc (Zn) from human breast milk and from cow's milk revealed that Zn bioavailability and utilization was lower from the latter. Zn-complexing studies indicated that this effect is produced by the binding of Zn by cow's milk casein rather than by low molecular weight ligands. Experiments concerning the binding of Zn with specific ligands and proteins are described.(wz)
