Malden's "Super" kitchen

A small but efficient foodservice operation in Malden, Massachusetts is described. It produces 3,600 meals each day for eight schools and 75 meals for the Meals on Wheels program. The kitchen is designed for maximum production and efficiency with a daily cost of 87 cents per meal. The operators cater to student food preferences as much as possible. The directors feel nutrition education should be an integral part of each school's curriculum.
