A guest editor expresses her opinion as to why the public will not support the dietary recommendations of the American Heart Association, especially its recommendation to reduce fat consumption from 40 to 30% of total calories. The author believes that fat reduction recommendations are radical and unrealistic given the food habits of Americans. Consumption of foods such as milk, cheese, butter, hydrogenated margarines, shortenings, meats, and commercially produced products, such as cookies, would have to be cut in half in order to achieve the recommended level for saturated fat (17% or less of total calories). This modification would require adjustments in the other dietary fats, so that intake of polyunsaturated and monounsaturated fats each would equal 1/3 of total caloric intake. A more realistic approach would be to focus on a saturated fatty acid intake reduction of about 15% with a modest increase in polyunsaturated fats and a reduction of total fat calories to less than 40%.
