Foodborne pathogens, including the incidence of foodborne diseases, the factors that contribute to them, the new processing technologies, and the potential they present relative to foodborne illnesses are reviewed in this article. The role that the food industry has played in assuring a safe food supply is explored. Data are cited, where they exist, along with sources. Interpretations of some data are provided with the authors personal opinions noted in the text. Some specific topics covered include: 1) the control of foodborne pathogens; 2) modified atmosphere packaging; 2) sous vide products; and 3) aseptic packaging and processing.
