Salads are among the top selling menu items in hospitals, colleges and schools. Salad ideas which are popular in various schools are described. Inviting fruits and vegetables sculpted into flowers is an appealing new way to promote the ever popular daily salad specials. Several sculptures are pictured, and the quality tested institutional recipes are provided. The selections include chicken in a garden, chick pea buffet salad, mushroom and turkey club salad, and avocado seafood salad.
