The inhibitory effect of bran on iron absorption in man

Iron absorption studies were performed in 60 volunteers, 19-42 years of age, to analyze the mechanism by which whole wheat bran and its components inhibit the absorption of nonheme dietary iron. The addition of 12 g bran to light meals of high or low iron availability decreased absorption by 51-74%. Labeled iron from monoferric phytate was absorbed to the same degree as the common nonheme iron pool; monoferric phytate (the major form of bran iron) did not account for the inhibitory effect. Moreover, phytate removal from the bran did not change the extent of inhibition. Dephytinized bran was separated into a soluble, high-phosphate fraction and an insoluble, high-fiber fraction. Although no bran component significantly inhibited iron absorption, greater inhibition was noted with the soluble bran fraction, suggesting that phosphate is more inhibitory than fiber. (nm)
