Food service adjusts to changes

Food service distributors attending the National Sales Marketing Conference of the North American Foodservice Companies, Inc. were advised to expect continued industry changes in the near future in a speech given by Gil Kretzer, executive director of the International Foodservice Distributors Association. Consolidations in operations, suppliers, and distributors, and intra-industry competition were identified as two key challenges to industry operators. Possible characteristics of the future food service industry include 1) fewer family businesses, 2) improved cost-effectiveness, 3) greater use of technology, and 4) better trained personnel. By becoming aware of trends and changes in the marketplace, food service distributors can better prepare to meet the challenges that the future holds for them.
