What's in modern cleaners?

New technologies and environmental and health issues have created a need for more specialized cleaning products in the restaurant industry. The key to efficient cleaning programs is selecting the appropriate detergent from the wide range available. Properties of soaps and synthetic detergents, which compose most of the cleaners currently on the market, are outlined. Types of ingredients commonly found in cleaning products include abrasives, acid cleaners, alkalies, degreasers, disinfectants and sanitizers (iodophors, quaternary compounds), metal cleaners, odor control agents, and solvents. The functions, uses, and characteristics of specific compounds in each ingredient category are described. Regardless of the cleaning product selected, each should be used according to package instructions.(aje)
