A review of 5 major-selling food and nutrition textbooks currently on the market showed that 4 out of 5 do not address the US Dietary Goals or the Dietary Guidelines for Americans. All 5 suffer from major weaknesses; some ignore important contemporary consumer issues (such as the use of additives) or soft-sell controversial subjects like food (agri) business practices, advertising, and starvation. Most stress the Basic Four food groups without enough exploration of nutrient sources and food composition. (kbc)
