Nutritional concerns are becoming more important to the nation's fast food industry, as consumers demand fast food that fits into their growing health consciousness. D'Lites of America, opened in Atlanta in 1981, is the first national chain to specialize in fast food that emphasizes the trend toward good nutrition. D'Lites offers consumers a variety of menu choices that are lower in calories, fat and cholesterol, or higher in fiber than their conventional counterparts. A large test kitchen located at corporate headquarters continually creates and tests new products in an environment that simulates operating conditions. The primary difference between D'Lites and other fast food operations involves the number of fresh and reduced-fat foods obtained from D'Lites suppliers rather than in-store food preparation practices. Examples of lower calorie products used at D'Lites include 1) ground beef that is 20 per cent fat rather than the usual 22-30 per cent, 2) fish fillets with 20 per cent breading rather than the usual 30-50 per cent, 3) ham that is 95 per cent lean (the leanest available on the market), and 4) cheese and mayonnaise made with 50 per cent less fat.(aje)
