Current practices in the southwest region in providing for children with special needs within school lunch programs

Extract: The purpose of this study was to determine how the nutritional needs of children with developmental disabilities and chronic illnesses were being met in school lunch programs. A validated survey instrument was mailed to 500 school food service directors and 500 special education coordinators throughout the southwest region of the United States. Frequency data were compiled. District food service directors indicated that food allergies and diabetes were dietary modifications required among the children with whom they worked. Special education coordinators reported that modifying the consistency of menu items was the most frequent request in their school districts. Provision of eating devices and modifications for food allergies and cerebral palsy were other needs identified by the special education coordinators. Food service directors made the following provisions to meet the special dietary needs of children: modification of menus and recipes, and modification of the consistency of foods. Special education coordinators reported that common provisions for children with whom they worked included spoon feeding, modification of food consistency, and provisions of eating devices. Respondents to the survey identified the need for additional training and education in the following areas: governmental regulations, assessing the needs of children, and menu and recipe modification.(author)
