Quality of Carrot and Radish as affected by Machine Washing and Storage

Manual and machine washed carrot and radish (with and without leaves) were assessed for shelf life and quality attributes when stored in open crates under refrigerated conditions (Temp: 5±1°C and RH: 90±1%). The carrot and radish with and without leaves were exposed to machine washing at optimum speed and washing time i.e. 40 rpm for 8 min, 55 rpm for 5 min and 50 rpm for 5 min, respectively prior to storage. The machine washed carrot samples showed minimum change in colour and maximum retention of ascorbic acid. However, manual washed carrot samples witnessed comparatively less variation in mass loss, firmness and overall acceptability as compared to that of machine washed samples. On the other hand, machine washed radish without leaves showed significantly (p=0.05) lower loss in quality attributes except for colour change and overall acceptability in comparison to radish with leaves. The machine washed samples were comparable to manually washed samples throughout the storage period and machine washing witnessed improved shelf life of selected root crops for the period of approximately 3 weeks under refrigerated storage conditions. Also, the machine washing was comparatively cheaper to manual washing for the selected root crops.
