Johns, T. | Booth, S.L. | Kuhnlein, H.V.
Differential intake of provitamin A and preformed vitamin A can be explained in part by the natural variation in the nutrient content of individual foods. It is also determined by dietary beliefs and practices. In the first part of this paper, the seven general food categories presented in the preceding paper are explored in terms of factors influencing their intake. The discussion of each category is divided into four sections: inclusion in the diet, exclusion from the diet, seasonal factors, and economic factors.
