Traditional recipes of migrants from Boyaca to Bogota, Colombia
1992
Romero, M.E.
An examination of the Colombian literature, both in anthropology and in nutrition, leads to the conclusion that even though several studies of feeding practices have been carried out, a lot of the work has not been published, or the projects were never finished. Some of these studies provide broad information on the country as a whole or on main cities; very little information is available on traditional indigenous and peasant foods. The vast cultural traditions of foods and food behaviors from different regions of the country essentially remains to be examined. This study documents aspects of the cultural traditions related to food of a group of migrants from Boyaca, a province near Bogota, to the capitol city. A total of 61 different recipes were collected from nine informants. The analysis of four recipes suggest that peasant traditional foodways contain elements of high nutritional value and that these preparations could be used in programs of nutrition education and institutional feeding.
