A thought process is forming when a customer first patronizes a restaurant. Much expense and effort can be lost if the establishment does not look clean or is not clean. A favorable first and lasting impression should not only start with the outside appearance, but should reach into all areas within the restaurant. Items that should receive attention in the outside facility, dining areas and inside facility, restrooms, and kitchens are pointed out. Strict cleaning procedures are essential.
