Hawaiian Plantation Cake
1978
Mayland, Edward J.
The Professional Pineapple Cooking Contest was one of the largest cooking contests ever held for the foodservice industry and was designed to promote the use of pineapple in a variety of desserts, salads and main dishes. Entries were judged not only for creativity, attractiveness and taste, but also for good product use, practicality, technique and clarity in preparation. A recipe is presented for the grand prize winning entry, a three tiered confection of lady fingers soaked in pineapple rum, layered with pineapple chunks and butter cream, iced with marzipan and specially decorated with macadamia nuts and confectioners sugar. It requires no baking.
