An overview paper discusses and illustrates analytical applications of ion chromatography for the determination of anionic and cationic elements in various foods and beverages. The method is based on the column chromatographic separation of sample ions, followed by their sequential (and hence, selective) detection as they elute the column and are quantitatively sensed by a conductivity cell detector coupled to a potentiometric recorder and an electronic integrator or computer. Chromatograms are shown and discussed for analysis of trace ionic species in potato process water, red wine, flour, wort, bread dough, vegetable juice cocktail, and blue cheese. (wz)
