Education and training for school food service personnel
1981
Vaden, Allene G.
The background and significant developments in school foodservice personnel training, the need for training, and studies on development and/or evaluation of training materials and programs over the past 25 years are reviewed. Inadequate evaluation of training effort is still a major problem area. Program regulations do not address personnel standards for child nutrition problems. Establishment of the FNIC as recommended by the 1967 School Lunch Task Force and the National Advisory Council on Child Nutrition has been a considerable accomplishment, but the recommended establishment of graduate traineeships for supervisory personnel education has received little attention. Efforts to upgrade school foodservice personnel and their competencies, qualifications and training still require emphasis. A set of 14 conclusions and recommendations for school foodservice personnel training was developed, including: development of standards for local, district and state level personnel to enhance competence; developed competencies should be validated through combined efforts of practitioners and educators; evaluation strategies for all training levels should be strengthened; and greater use of the FNIC should be encouraged.
