The Los Angeles School District, under the direction of Al Wood, has the second largest school lunch program in the nation. A 5.5 million dollar super kitchen facility produces 60,000 meals daily; in addition, a commissary produces 5 million pounds of dried food mixes and frozen food components for use in school menus. Federal funding cuts and increased costs will cause major changes in operations. Variety will be reduced to a cycle menu of 15 days for elementary schools; 7 choices have been reduced to 3 choices for secondary students. Labor costs will be reduced despite a 7% pay increase by reducing hours and not replacing employees lost by attrition. A nutrition education program is directed by 3 dietitians. Al Wood feels that the school lunch program is an important part of American society, education, and business. (rkm)
