Nitrite update: The urgent search for a policy

The FDA will have to deal with the "balance of risks" related to the nitrite issue. The dangers from using or not using nitrites in cured meats must be weighed. Possible answers considered include: using reduced amounts of nitrites and potassium sorbate; frozen, nitrite-free products; and the future development of a nitrite substitute. A bill linking nitrite legislation to the saccharin debate has been introduced in Congress. Canadian policy on this matter is briefly examined.
