Food theft--how it's done and how to stop it

Several types of food theft are described: eating food on the spot; stealing food for later use; undercharging customers; faking orders; and, using garbage containers for hiding stolen foods. These thefts can be avoided by: close supervision; making it inaccessible; having the cashier carefully check the bills; using duplicate order forms for the kitchen and waiters; and, inspecting all refuse before it leaves the kitchen.
