As a result of more efficient distribution methods, consumers now have available a wider variety of fresh produce including less common vegetables such as snow peas and spaghetti squash. A seasonal review of such vegetables is provided describing the vegetable, its origin, cooking and selection techniques and appropriate storage. Vegetables illustrated and discussed are: chinese mustard cabbage (bok choy); daikon radishes; jicama; okra; radish sprouts; snow peas; spaghetti squash; water chestnuts; chayote squash; and yard-long beans. A table exhibiting calories and percentages of the Recommended Dietary Allowances for major nutrients per serving is also provided.(mjs)
