Spices can add that extra little zest to school lunch programs. Variety and acceptance are growing, and add to menu possibilities all the time. Children's taste is more acute than older people, so only small amounts are necessary. Favorites include Italian seasonings, chili, curry, and barbecue flavors. Spices should enhance food flavor, not obscure it. Fresh spices lose their flavor rapidly, so are added at the end of cooking time. Well packaged, good quality spices are a worthwhile investment. Storage should be in a cool dry place to preserve their usefulness. A chart lists foods that are complemented by various spices, and recipe suggestions are made for beef stew, savory chicken and meat loaf.
