Worldwide wheat consumption ranges from 100 to 500 + pounds/capita/year. Wheat provides from 19 to 62 g protein/capita/day with increasing consumption indicated for economically developing countries (EDC). Nutritional implications are 2 fold: wheat, especially, appears to meet adult protein requirements, but possibly not those of children less than 1 year of age and for those between 10-12 where protein quality and quantity requirements are highest; and lysine, and essential amino acid, is limited in most grains and cereals. Lysine concentration is further decreased during the milling process. Before considerations are given to developing a superior cereal/grain protein, or providing lysine supplementation, thought must be given to how and with what other foods cereal and grain products are consumed. Designing nutrition intervention programs on a cost-effective basis for the general population should be analyzed critically. Furthermore, additional information is needed on the degree of cellular disruption and digestion of cell contents which occur during digestion to determine actual protein availability. (kbc)
