A Protein Puzzle Kit was designed to explain how to combine protein foods to produce a complete protein. The kit consists of an instruction card and 3 puzzle pieces representing 3 protein food groups: dried beans and peas (legumes); grains, nuts, and seeds; and meat, dairy, seafood, poultry, and eggs. Each puzzle piece has 4 color-coded sections which represent essential amino acids that are limiting in certain plant proteins. Protruding, interlocking ends represent amino acids found in sufficient amounts in the plant protein group; sections with recessed interlocking ends represent limiting amino acids. If 2 or more puzzle pieces fit together, the foods they represent combine into an optimal proportion of essential amino acids. Food guides are included. (wz)
