All-black catering firm perfects campus feeding, diversifies rapidly

A combination of professional training, a commitment to quality and an idealistic conviction that black companies should serve black people has led to the success of Gourmet Services (GSI), a specialist in feeding students at black colleges. Recruitment is supported by providing internship programs for interested students and support for hospitality management programs. Food service is not routine at the colleges served by GSI. Serving styles are changed from cafeteria to disco suppers; special events happen regularly; evening entertainment with beer and pizza is offered on weekends; and one university even has a pub. Techniques to keep costs down include wars on plate waste and flexible meal card systems. GSI is continuing to grow in college food service operation and related areas, such as contract custodial care and equipment supply.
