A brief review considers short-term experiments that have been conducted to assess the blood glucose level response to various foods. Such studies have revealed that, while wholemeal bread and potatoes gave a less satisfactory glycemic response than several other foods, these substances should not necessarily be eliminated from or restricted in the diabetic diet. In fact, it appears that while short-term test meal and laboratory digestion experiments are of interest, they cannot replace longer term feeding studies for assessing the best foods for diabetics.
