Acute effects of food and ethanol on plasma zinc concentration

Plasma zinc concentration in 6 healthy subjects was affected by food intake. Although no significant differences in plasma zinc were observed in fasting individuals at 9 am, 11 am, and 3 pm, after breakfast and lunch zinc concentration fell to 79% of 9 am values by 3 pm. Ingestion of 35 g of ethanol alone produced no change in plasma zinc concentration, but ethanol intake did prevent the decline in zinc levels induced by food consumption. The fall in plasma zinc may be due to intracellular compartmentation of zinc, increased zinc excretion, or tissue uptake of zinc promoted by a postprandial rise in insulin. Ethanol may inhibit zinc transport or otherwise affect zinc retention.
