Paul Fairbrooks, Director of Auxiliary Services at the University of the Pacific, uses many merchandising gimmicks in his campus food service operations to compete for student participation. Special menus, once a month spectacles, homemade soups, salads and breads, health foods, and international dinners are offered in several different restaurants, open different times of the day. Publicity and suggestions from students play important roles.
