Schools serving the latest USDA commodity: fish nuggets

Fish nuggets are one of the most recent additions to the list of USDA commodity items available to schools. The Alaskan pollock nuggets are battered, fried, and frozen; they can be oven-baked straight from the freezer in less than 20 minutes. Nuggets can be served as part of a traditional menu, or with a variety of dipping sauces and relishes. Suggested accompaniments include dill sauce, salsa, yogurt, tartar sauce, cheese sauce, sesame and soy sauce, or honey and orange sauces. Standardized recipes are included for two more popular dipping sauces: a spicy barbecue sauce and a tangy sweet and sour sauce.(aje)
