Until USDA establishes standards for total protein substitutions, strict vegetarian meals cannot be served in school lunch programs. However, the USDA does allow foods acceptable to lactovo vegetarians, such as eggs, peanut butter, and cheeses, as substitutes for the two ounce meat requirement. Another method of meeting the protein requirement in meals is to combine foods that each have some protein value such as enriched pasta with nuts, seeds, or eggs. Pickles can be added to an otherwise bland meatless meal with such tasty recipes as pickle-lilly egg mix; gherkins make all the difference. Sauerkraut is included in the potato pancakes.
